Quick side dish with amazing flavors! Remove the stem and scoop out the inside of 8-10 mid sized mushrooms and discard because the caps will act like vessels. Squeeze 1 lemon and add the juice to 3 grated garlic cloves. Put the mushrooms on a roasting dish and sprinkle each cap with salt and pepper. Spoon and divide the garlic lemon juice among the caps. Drizzle extra virgin olive oil over the mushrooms and bake in the oven at 380 degrees for 15 min. Take out the mushrooms and tear a piece of mozzarella for each cap. Finish by sprinkling some grated parmigiana. Broil the mushrooms under high heat for a couple of minutes or until you see a pool of unctuous melted cheesy goodness.
