Almond Butter Cereal Bars

Almond Butter Cereal Bars – A super easy and nutritious treat for the whole family. Gluten Free and Vegan



Serves 4-6

Prep Level: Easy


Ingredients:

2 ½ cup crisped brown rice cereal

½ cup almond butter

¼ cup honey or maple syrup (sometimes I use honey and sometimes maple syrup!)

2 tablespoons coconut oil

8 Medjool dates, finely chopped

1 tablespoon vanilla extract

Pinch of salt

*100 grams of white, milk, or dark chocolate melted in the microwave, to decorate (optional)


How To:

Spray an 8 inch x 8 inch pan with cooking spray and cover/press the bottom of the pan with parchment paper leaving some of the paper to overhang so you can easily lift the cereal when it’s set. In a small non-stick pot, on low to medium heat, add the coconut oil, almond butter, dates and honey. Keep stirring until it begins to bubble, and when it does, turn off the heat. Add the vanilla and salt. Pour the almond butter mixture to the bowl of cereal and gently mix till incorporated. Empty the almond butter cereal mixture to the pan and spread it in an even layer. Chill in the fridge for 2 – 4 hours. Holding on to the sides of the parchment paper, gently lift the mixture from the pan. Using a serrated knife, cut into about 16 bars. The bars will not be too firm, but are ready to eat! Alternatively, instead of bars, you can form the cereal mixture into tablespoon-sized crunchy sweet balls of yum. Leftovers can be stored covered in the fridge. * If using chocolate: pour the melted chocolate of choice on the edge of each bar or drizzle it on the surface of the cereal. Chill for 1 hour before serving.
